Abstract:
The aim of this study is to examine the influence of food availability and accessibility on fruit and vegetable consumption in both urban and rural areas of Akwa Ibom State, Nigeria. The consumption of fruits and vegetables is essential for maintaining a healthy diet and preventing various non-communicable diseases. However, inadequate access to and availability of these nutritious foods can hinder their consumption, particularly in resource-constrained regions.

This research employs a mixed-methods approach, combining quantitative analysis and qualitative interviews. A cross-sectional survey will be conducted among a representative sample of households in urban and rural areas of Akwa Ibom State. The survey will collect information on food availability, accessibility, and consumption patterns of fruits and vegetables. The sample will be selected using a stratified random sampling technique to ensure representation from both urban and rural areas.

Quantitative data will be analyzed using descriptive statistics and multivariate regression models to explore the relationship between food availability, accessibility, and fruit and vegetable consumption. Additionally, qualitative interviews will be conducted with key informants, including community leaders and local farmers, to gather in-depth insights into the barriers and facilitators of fruit and vegetable consumption in both urban and rural settings.

The findings of this study are expected to provide valuable insights into the factors influencing fruit and vegetable consumption in Akwa Ibom State. By understanding the impact of food availability and accessibility, policymakers and stakeholders can develop targeted interventions to improve the consumption of these vital food groups. Enhancing availability through increased production and distribution channels, as well as improving accessibility through transportation and market infrastructure, may positively impact fruit and vegetable consumption in both urban and rural areas.

This research contributes to the existing body of knowledge by shedding light on the specific challenges faced by urban and rural populations in Akwa Ibom State regarding fruit and vegetable consumption. The study’s findings will serve as a basis for evidence-based interventions aimed at promoting healthier dietary habits and improving overall public health in the region.
