Abstract:

Fresh produce, predominantly comprising fruits and vegetables, constitutes a vital component of the human diet, as it is rich in essential vitamins, minerals, and dietary fiber. However, the escalating consumption of fresh food has paralleled a surge in global disease outbreaks. This phenomenon is especially concerning since fresh produce is often consumed in its raw form, rendering it susceptible to contamination by pathogens like E. coli 0157:H7. Such contamination can lead to foodborne illnesses, with severe cases potentially resulting in renal failure and even fatalities, particularly among children. In economically disadvantaged regions such as Nigeria, fresh produce is commonly obtained from both formal stores and open roadside kiosks, often lacking proper hygiene measures.

This study reports on the prevalence of Shiga toxin-producing E. coli (STEC) in a variety of fresh produce items (including lettuce, watermelon, pineapple, cucumber, cabbage, carrot, and pawpaw) sourced from different roadside fruit vendors across the South-west region of Nigeria, specifically Lagos and Ogun states. E. coli presence was assessed in a total of 64 samples using SMAC and MAC plates. Additionally, selected isolates (n = 21) were subjected to multiplex PCR to identify STEC virulence genes (stx1, stx2, and eae).

The presumptive STEC total viable count (TVC) in the sampled produce ranged from 4.5 to 7.8 log10cfu/g, with Ibafo lettuce registering the highest TVC at 7.8 log10cfu/g. The presence of STEC was confirmed through the detection of the stx1 virulence gene, observed solely in Magboro Watermelon using Multiplex PCR. The presence of STEC in fresh produce presents significant public health concerns, as it can give rise to foodborne disorders such as haemorrhagic colitis (HC) and haemolytic uremic syndrome (HUS).

Therefore, it is imperative to raise awareness regarding proper hygiene practices among consumers to mitigate the risks associated with STEC-contaminated fresh produce.
