AN EVALUATION ON SALMONELLA IN GAME MEAT AND PRODUCE IN SOUTH-WEST NIGERIA, ISOLATION AND RESISTANCE

Abstract:

Salmonella, a frequently encountered foodborne pathogen, poses a significant health risk when invasive serotypes are involved. Ready-to-eat (RTE) foods, including fresh produce and smoked game meat, have been identified as potential vehicles for Salmonella transmission. This research aimed to assess the prevalence of Salmonella contamination in street-vended RTE game meat and fresh produce. A total of 55 game meat samples were sourced from markets in South-western Nigeria, while 60 fresh produce samples were collected from roadside vendors across Ogun state. Molecular typing was employed, utilizing Salmonella spp.-specific PCR, and antimicrobial susceptibility testing, including the assessment of Extended Spectrum Beta-lactamase (ESBL) production through the Kirk-Bauer disk diffusion method, was conducted. The findings revealed a substantial Salmonella spp. prevalence of 89% in game meat, whereas fresh produce samples exhibited a lower prevalence of 20%. Moreover, multidrug resistance was identified in 12 Salmonella isolates from fresh produce. This study concludes that pathogenic multidrug-resistant Salmonella spp. strains contaminate game meat and fresh produce in South-western Nigeria, underscoring the need for improved food safety measures in these regions.
